Tests of Server-side API

This is the same thing we described in Discord and in person, nothing new.
Please don't test the api/users routes, they're probably going away soon anyway.

Importantly, please test with both negative and positive tests.

Pushed backend test suite to the testing-development branch.

The test suite appears to be working as expected, but it did find an error in [userId].ts:

test/api-endpoints/availability.test.ts > PUT /api/meetings/[meetingId]/availability/[userId] (server handler) > Creates availability for existing user & meeting -> returns 201 and availability body

I don't actually see the tests of the server API as of the latest commit on dev, 2123300.
