Add macOS Notarization support to app releases #835

Describe the issue
Caldis/Mos app releases are currently not notarized by Apple. As a result, users encounter Gatekeeper warnings and are sometimes prevented from installing or opening the app on recent macOS versions that enforce strict security policies.
Impact
The lack of notarization causes users to see explicit security dialogs ("cannot be opened because the developer cannot be verified"), requiring additional steps to install or launch the app. Some users may be completely blocked, especially in managed or enterprise environments. This reliably results in confusion, support issues, and decreased adoption on newer versions of macOS.
Suggested solution
- Integrate the macOS notarization process into the build/release pipeline.
- Update documentation to reflect notarization support.
- Ensure binaries are properly signed before notarization.
- Test releases on the latest macOS to confirm compliance.
