This issue focuses on implementing Backend: Automated Postman Collection generation from OpenAPI to enhance the EventHorizon platform's dx capabilities.

Background

As the protocol scales, we need robust solutions for dx to ensure high availability, security, and a seamless developer experience for the Stellar Soroban ecosystem.

Technical Requirements

• Scripts to generate and update Postman/Insomnia collections.
• Include pre-built environment variables for local development.
• Integrate with CI/CD for automatic updates.

Acceptance Criteria

• Feature implemented according to requirements.
• Unit and integration tests added and passing.
• Documentation updated in the /docs folder.
