Had multiple animals walk straight ahead forever. It just happened, I never noticed any reason or trigger, I'd just go to feed them and sometimes one would be doing it. The animal could be fed directly via WolfTaming and Truth and Beauty, and they could be hit by me and lose health, but they wouldn't stop staring ahead and walking, even when blocked by literally anything. I could use animal cages to pick an affected animal up and place them back down, which would "reset" them so to speak and they'd go back to normal. However, one of my donkeys (Feverstone Horses) won't fix itself even with a restart of the game. I will include link to my full mods list below. Truly not sure if it's this mod or another that is the cause, as I have so many, but had to start somewhere.
