architecture: unify modes in one app — Particles (existing) + Flocking (own sliders), extensible #7

Description

@juniperbevensee

The flocking instrument points at a bigger shape: one app with a mode menu. 'Particles' = the existing webcam-matte instrument with all its current presets/sliders; 'Flocking' = its own base mode with its own sliders/toggles/shapes. Make the modes pluggable and the pieces (renderer, overlay-UI panel, audio, presets) reusable across modes so new base modes (reaction-diffusion, slime-mold, etc.) drop in cleanly. Same app, extensible patterns. Today flocking lives as experiment 06 with its own loop; the unification is: a shared shell that hosts mode plugins, each declaring its own controls. See also #4 (flocking in the webcam pipeline) and #5 (geometry).
