feat(bundle): uninstall.sh + update.sh (v0.6.2)

- uninstall.sh: symmetric to install.sh. Removes 7 Go binaries, 8 Python
  subsystems, sin-brain, the Python bundle, and strips 10 MCP keys from
  opencode.json. Flags: --dry-run, --verbose, --force, --keep-{go,bundle,
  subsystems,config}. Idempotent (re-runnable, missing items skipped).
- update.sh: in-place refresh. git pull, pip install --upgrade for bundle +
  8 subsystems, force-rebuild Go tools, re-register MCP servers. Flags:
  --force-rebuild, --skip-{go,external,pull}, --subsystems-dir.
- CoDocs: uninstall.sh.doc.md, update.sh.doc.md
- README Quickstart now documents the install/uninstall/update trio.
- Bump to 0.6.2.

Verified: install.sh -> uninstall.sh --keep-* (Go binaries only) -> verify
gone -> install.sh --skip-external --force (Go binaries back, MCP registered).
Both scripts pass bash -n, --help exits 2, dry-run produces no side effects,
re-runs are idempotent.
