It looks like Pumpkin-MC/Pumpkin#1241 was made to address plugins not building. The API changed slightly in it.
The template repo this is based on has a PR addressing these same changes, which can probably be used as a reference when updating PLua: PumpkinPlugins/Hello-Pumpkin#3.
