Subject: [PATCH] docs: 'On a Debian 13 (trixie) system' -> 'On a Debian Stable
 system'

Companion to the org-wide version-pin cleanup. The publish workflow keeps
its pinned debian:trixie@sha256 build container (build mechanism, unchanged).
