Docs: Standardize spelling for consistency #119

Description
During a review of the documentation and template files, some minor spelling inconsistencies were found. To improve documentation quality and maintain consistency, these should be standardized.
This standardizes on American English spelling, which appears to be the convention in the rest of the repository.
Proposed Changes
- In
test/templates/good/insurance-sub-limits-liability/template.md, change "Defence" to "Defense". - In
test/templates/good/optional-nested/template.md, change "colours" to "colors". - In
test/templates/good/playground/template.md, change "colours" to "colors".
