Update dependencies version

🐛 Describe the bug

Not really a bug, though generating a personal python package from this template, I immediatly got 10+ Dependabot PR to update some of the dependencies versions.
It's a big annoying to resolve them by hand, so it would make sense to update these dependencies ? I can contribute with a PR if needed.

You're right @paulduf, we're definitely due for a bulk upgrade. #129 should fix. I also loosened some of the pinned ranges.
