Update CHANGELOG.md for v2.0.0 #32
Description
Update CHANGELOG.md following Keep a Changelog format.
- Add v2.0.0 section with all breaking changes, new features, and improvements
- Document migration notes from v1.x (option name changes, minimum requirements)
- Ensure existing v1.x history is preserved
- Format matches apermo-surf CHANGELOG pattern
