coef() + confint methods for glmmTMB, lme4

We can get `coef()` results with std devs/confidence intervals from `merMod` objects (code [here](https://stackoverflow.com/questions/78923181/how-can-i-extract-and-report-the-random-slopes-and-confidence-from-a-glmer-in-r/78923931#78923931)) or from `glmmTMB` objects (code [here](https://github.com/glmmTMB/glmmTMB/issues/1096)).  Might take a bit of work to generalize though ...
