is there a way to pass entity_mappings to GLiNER class via configuration ?

Use entity_mapping in the GLiNER recognizer config block, e.g.:

recognizers:
  - name: gliner
    type: gliner
    model_name: "urchade/gliner_multi_pii-v1"
    entity_mapping:
      person: PERSON
      organization: ORGANIZATION
      location: LOCATION
