Update the fpca$percent_var result to a tibble

Currently the result from fpca(...)$percent_var is a named vector of variances explained by each principal component.

The tibble-ization of that vector done here on the shiny side of the house might by handy to push up to the analysis side of the house here

Note that this might be too much of a PITA to care.
