Plugin generating the documenations for the OPTIONS method as well.

Hello,

I am using this plugin for the generating the api gateway documentations for my serverless project but this plugin also generating the unwanted entry of the OPTIONS method as well, any chance we can exclude generating the entry for the options method and generating the entry only for the valid endpoints.

I have one use case where I am downloding .yaml file from API Apigateway and utilizing that file to generate the .mdx files and schema but that output file contain the unnecessary options method. I need to manually remove it.

Let me know if we can do this by including the options like above
