synctoken is a MUST but not provided in the examples

None of the examples provided include a synctoken. It could be worth adding so examples are complete.

For instance, I've complete the first example on https://github.com/thibmeu/jafar/blob/main/examples/1-basic-publication.json

The removal of formatVersion in favor of a media type and the marking of synctoken as optional addresses this issue.
