Add Minimum Required Node Version to README/CONTRIBUTING docs

While working on #435, I got stuck on initial setup because I was using node 8 and something in the dependency tree didn't like that.

Switching to node 14 solved my problem.

It would be useful to have a note somewhere, either in README.md or CONTRIBUTING.md, that specifies the minimum required node version.
