About 2-3 months ago after a Obsidian update, I noticed that I could no longer use the Cmd/Ctrl-V command to paste text in Obsidian anymore. If I issued the "Paste" command through Obsidians command list, that would work.
After some debugging by stepping through my various plugins, I tracked it down to the Paste Mode plugin. Noticing on your comment about Markdown pasting not working with the latest Obsidian, I figured it was just when using Markdown as the paste mode. Unfortunately, the issue persists with every paste mode (including pass through).
