Add support for configurable timeouts

Recently, support was added to honour timeouts in the manticore client. We should also allow users to specify timeouts in the configuration, as is available in the elasticsearch input - the manticore client has a default value of 10 seconds for the socket timeout, which may not suit all users.

Is there any udpates about these configuable timeouts ? Do you plan to priorize this feature in future versions ?
It would be really helpful for some use cases we have in my org.
