Revise gene mapping strategy for text-mapped genes

Current implementation: HGNC download for text-mapping, BridgeDb to convert to gene/protein IDs.

Issue: HGNC download not dynamic / updated.
Issue: missing good documentation of mapping and for users to retrieve
