Themes are available in the beta version. You can create and edit them in the Appearance tab of Preferences.
However, I believe the second image is from a fork of OpenUtau due to it having a border around the notes, which I don't think can be edited in original OpenUtau.

Yes, the second image is likely the Lunai fork (primarily for Diffsinger), and the third looks a bit like an older outdated image...? The first is accurate to what Nago said-- and the gradient is actually always there! It's just very subtle, so it's just a matter of changing the colors to something more contrasting :)
