First (pre)releases

Feels encouraging to get to a first couple of releases. First on Github and then Dockerhub. There's still a whole lot of packaging steps to organize and lay out. Meanwhile, on the server itself

• Windows builds. Real, maintainable, I dare say elegent.
• Ffmpeg updated from 7.1 to 8.1
• Build process is vastly improved around ffmpeg. Bring your own or build as needed. Really clean on both platforms.
