feat: add the ability to rename a project

Sometimes you want to rename a project, you picked the first name name chatgpt picked when you started out and along the way you come up with a better name.

It would be nice if you could reattach existing threads to another folder on your system or a rename action would be provided in the right click menu for the project folder name.
