### Observed behavior and steps to reproduce

EAS Builds fail when specifying xcode 16 on Expo 51. [Apple store now requires builds on xcode 16](https://expo.dev/blog/apple-sdk-minimum-requirements). 

Builds also fail when upgrading to Expo 52 and 53.

### Expected behavior

No issues EAS builds on xcode 15 with same versions
