Subject: [PATCH] repo2graph: persist lab workspace in a named volume

The lab vein workspace defaulted to ./lab-workspace in the container's
writable layer (VEIN_LAB_WORKSPACE was never set), so run history/outputs
and UI-edited steps/workflows were lost on container recreation. Set the
env var and back it with a named volume, matching the existing
sessions/artifacts/reqs/cache pattern.
