Release v.1.6.2

Per the discussion at the last dev meeting, we want to release v1.6.2 (which now includes the new docs pages) before AGU, which starts next Monday. Given that timeline, I want to start the discussion toward a release (I've included the checklist below so we can use the same issue).

PRs/Issues Left:

• Add new 3D blob tracking example #500
• enabled label / region output from feature detection #488

I think if we move expeditiously, these three PRs can be merged before release.

Checklist for releasing vX.Y.Z:

• Re-run notebooks and commit updates to repository
• Bump version in __init__.py in RC_v1.6.x
• Add changelog in RC_v1.6.x
• Add new contributors to v1.6.x
• Merge RC_v1.6.x into main
• Delete RC_v1.6.x branch
• Create release
• Push release to conda-forge
• E-mail tobac mailing list

Thanks for starting this! I've re-reviewed #488 and happy for it to be merged. #500 needs to resolve merge conflicts but is otherwise ready to go, and I will work on finishing #512 this week

I'll have a look into it, I think some things may have changed with how zarr and intake work together

@w-k-jones Once I updated my requirement to match our own requirements (specifically around the 0.7.0 version requirements for intake), it seems to work now. Thanks!
