add schema documentation + standardized enums

we need to finalize comments/naming conventions

• add doc comments to all fields explaining units (eg "quantity in base asset units")
• verify all enums follow the ENUM_NAME_UNSPECIFIED = 0 pattern to prevent proto3 default value bugs
