The icons are not loading (looks like chinese characters)

I have tried with multiple different icon sets, when I pass the component directly it works.

No, it's still there. You can manually put in the icon when showing the toast.

try add a react-native.config.js at root folder in your project and put this content inside:

module.exports = {
  assets: ['./node_modules/react-native-vector-icons/Fonts'],
};

and run this code in terminal :

(React Native < 0.73)
npx react-native link react-native-vector-icons

(React Native > 0.73)
npx react-native-asset

It's work for me.
