Apply an explicit ad-hoc signature to macOS releases

Root cause

The universal macOS application and DMG were generated, but Tauri left Jauto.app completely unsigned when Apple Developer credentials were absent. The signature verification correctly rejected it.

Fix

• add a Tauri override with �undle.macOS.signingIdentity set to -`n- use that override only when the workflow selected ad-hoc mode
• retain the normal Developer ID and notarization path when Apple credentials are configured

Validation

• workflow and JSON formatting pass
• release versions agree at 0.3.0
• Tauri accepts the override and completes a release-profile build
