[Documentation] Document the need to run Docker for unit testing

## Description

The unit tests for this project depend on Docker running in the background.

Update the project documentation such that newcomers are aware of this requirement.

### Additional

Also add a note to mention what happens when the `init.sh` file is checked out with Windows line endings.
