Fix build warnings and jar corruption

[FelixGSE]

• Removing filtering from copy goal since this seem to corrupt the final jar somehow resulting in invalid CEN header (bad signature) (see similiar problem and solution here: https://stackoverflow.com/questions/50398722/invalid-cen-header-bad-signature).
• Also added UTF-8 encoding to fix warnings in build process
