Summary

set Android, HarmonyOS, and iOS mobile app versions to 1.0.0
advance the HarmonyOS and iOS build numbers for this release

Verification

Confirmed the PR contains only the three mobile version metadata files.
No build or device test was run; this change only updates release metadata.
