Bumps the version to 0.5.3 (package.json, tauri.conf.json, Cargo.toml, Cargo.lock) and moves the Unreleased changelog entries under 0.5.3 (#20).
Stacked on #21: merge #21 first, then this PR (rebased onto main). After merge, the
v0.5.3tag starts the release workflow.
