Fix Matter parameter mapping

Mapping fixes from the parameter-mapping audit:

• bytes fields map to base64 data
• Main parameters: unverified mains are commented out, one-way ones stay; hidden candidates are skipped so they do not shadow a later match
• Commands that require it are sent as timed invokes
• Infrastructure clusters and Aliro reader commands are hidden
• Every temperature attribute and command field is converted to and from °C
• Fetched values are normalized like subscribed ones, and subscribed raw JSON is parsed like fetched values

Rebased onto develop after #7 (pairing codes). Tests first. Local: poe check --ci green, 55 passed, 6 skipped (MVD, macOS).
