Improvement ideas

• switch to docker compose
• add more details in the readme
• start with commented out https and loki configuration (the readme specifies when to comment it in); https not commented out breaks the setup and prevents getting the let's encrypt cert and loki not commented out floods the logs with error messages
• rename NEXTCLOUD_DATA_DIR to LOCAL_NEXTCLOUD_DATA_DIR to avoid duplication with the by Nextcloud internally used variable
