docs: expand the README privacy policy section - #9

The Connectors Directory requires the README privacy section to address data collection, usage/storage, third-party sharing, retention, and a contact — incomplete policies are an immediate-rejection cause. Tightens the README privacy section ahead of the Connectors Directory submission.
The directory requires the README "Privacy Policy" section to explicitly address data collection, usage/storage, third-party sharing, retention, and a contact — incomplete privacy policies are listed as an immediate-rejection cause. The old section was a two-sentence pointer.
Renamed to
## Privacy Policyand covered each point: what the server receives, that it stores nothing, that requests go only to the Openmart API, and a link to the Openmart privacy policy for retention/deletion/contact.Docs-only.
