Add proof_minimal_theme so proofs use the QuantEcon minimal theme; the solution_follow_exercise exercise style is already set. Part of the cross-series harmonization tracked in QuantEcon/workspace-lectures#13. Co-Authored-By: Claude Opus 4.8 (1M context) <noreply@anthropic.com>

Pull request overview
This PR updates the Jupyter Book/Sphinx configuration to enable the sphinx-proof “minimal” theme so proof rendering is consistent with the rest of the QuantEcon lecture series configuration.
Changes:
- Enable sphinx-proof minimal theme via
proof_minimal_theme: trueinlectures/_config.yml. - Add small inline comments to clarify which Sphinx extensions the adjacent config knobs belong to.

Part of a cross-series harmonization so every proof-using Python lecture series uses the minimal proof theme.
jaxhad the exercise style but not the minimal proof theme. See the audit and checklist in QuantEcon/workspace-lectures#13.Note
Config-only change; no lecture content touched.
