Noticed this with Seed Carrots. I planted some, in spring and had adjusted my settings so that seed carrots only grow in the summer and fall. they showed unable to grow but sat there dormant no problem. I rebooted the server this morning after updating one of the mods that I had and when it booted back up they were all fully grown as seed flowers to be picked. Have not tested with any other plants as this is an early playthrough so carrots and trees are all we got so far to plant.
