The README previously led with the MCP proxy architecture. Attest is fundamentally an open standard for Action Receipts — the proxy is a reference implementation. Restructured to: protocol concept first (what, why, taxonomy), then reference implementation details (arch, project structure, quick start), with the roadmap split into protocol and implementation tracks.

Restructure README to emphasize the Attest protocol as the primary focus, with the TypeScript implementation as a secondary reference implementation.
