refactor: update nestjs to 11

This pull request includes updates to the apps/example and packages/zod-nestjs projects to add OpenAPI tags to the API endpoints and update dependencies.

OpenAPI tags addition:

• apps/example/src/main.spec.ts: Added tags to various API endpoints to categorize them under 'App' and 'Cats'. [1] [2] [3] [4] [5]
• apps/example/src/main.ts: Set the OpenAPI version to '3.0.0' in the Swagger configuration.

Dependency updates:

• package.json in apps/example: Updated several dependencies, including @nestjs packages to version 11.0.11 and @graphql-codegen/cli to version 5.0.5. [1] [2]
• packages/zod-nestjs/package.json: Updated peer dependencies to include support for @nestjs/common version 11.0.0 and @nestjs/swagger version 8.0.0.
