chore: fix stale catomean org references (docs, config, saldo package) - #418

github.com/catomean/... -> github.com/bitbaum/... across CONTRIBUTING.md, README.md, org.ts, statuten.ts, evig-projects.ts (the kivvi repo link), and packages/saldo/package.json's repository/bugs URLs. Found while resolving a merge conflict on an unrelated PR whose local branch carried a partial version of this same fix from 2026-08-28 -- six of nine files it touched were still unfixed on origin/main. Harmless today (GitHub's rename redirect still resolves these), but the same fragility class as the Actions uses: refs that don't get redirected.
