[AI-0331] docs: bump AI docs pin past CTX-0162/0163/0164 - #525

Bump the docs submodule pin from abb820b (CTX-0161) to c3008ce (bitty-ai-docs main): CTX-0162 conditional authenticated provider publication design (#288), CTX-0163 TLS external-PSK dependency feasibility (#291), CTX-0164 mutual-certificate replacement feasibility (#292). Three docs-content commits, no dependabot. No crate API or behavior change: both feasibility records select no mechanism and approve no dependency; strict publication stays disabled. No code, no behavior, no manifest change; docs/ mount stays empty. Review: APPROVE (PX-1477 ai-0331-reviewer). Gates: just check + act -n (ci.yml), exit 0.
