Support Pyroscope 2.0

Pyroscope 2.0 was released: https://grafana.com/blog/pyroscope-2-0-release/

This is a significant change to the way Pyroscope roles are structured. We need to consider how to handle the new roles and whether there is a migration path between the versions.

The upstream migration guide suggests deploying Pyroscope v2 next to v1, and then removing v1.

Note that v2 doesn't seem to be able to read data from v1 either.
