feat(kubernetes): add missing SIG Docs and SIG ContribEx repos

This PR adds several active sub-projects owned by Kubernetes SIG Docs and SIG Contributor Experience to the CLOMonitor tracking list.

Adding these repositories ensures that new contributors browsing CLOTributor can discover open help wanted issues related to documentation, community management, mentoring, and contributor tooling.

Some notes about your PR:

• Adding so many sub-projects to the Kubernetes project would make its CLOMonitor page hard to navigate. We've discussed this in the past, and we decided to leave the Kubernetes project with a minimal set of repositories. In some cases, as an exception for a justified reason, we've accepted some of them as individual projects.

• When the goal is to have CLOTributor process those repositories, the preferred approach is to use the exclude field and include clomonitor in the list. That way, CLOMonitor ignores that entry, but CLOTributor still uses it. Check sets should not be included in those cases.

• Some of the repositories you've added don't seem to be active at all (some without commits in years), and the check sets used does not seem to be correct (i.e. using code in repositories that only contain some markdown files).

• This kind of changes to the data files must be submitted or approved by one of the project's maintainers.

Closing this PR based on the maintainer feedback. Will reconsider the approach and potentially submit individual projects or use the exclude field for CLOTributor-only repos.
