LWLP-753: surface unsupported ecosystems in coverage analysis

Summary

• Show all ecosystems from a report in the ecosystem chart, including those not yet supported by the catalog
• Update coverage summary copy to clarify that unmatched packages may belong to unsupported ecosystems
• Refresh mocks and tests to cover the new ecosystem data

Run against: content-services/content-sources-backend#1731

Testing steps

• Upload a manifest with packages from supported (Java, Python) and unsupported ecosystems
• Confirm unsupported ecosystems appear in the ecosystem bar chart, listed last with neutral styling
• Verify coverage summary tooltips and description mention unsupported ecosystems
