Build the docs PDF in CI and restore the download link - #11

Sweep the pdflatex-breaking characters (arrows, >=, multiplication sign) to ASCII; fence the emoji download link in '.. only:: html'; docs.yml installs texlive, builds the PDF and ships it inside the versioned directory (/vX.Y/cryptnox-id-cli.pdf), where the docs hub already points. Client request: generate the PDF from the Sphinx docs, same mechanism as
the existing repos (cryptnox-cli's latexpdf flow, PDF shipped inside the
versioned directory like cryptnox-hardware-wallet).
The previous blocker was pdflatex failing on Unicode: fixed by sweeping
the sources (17 arrows, one >=, one multiplication sign) and fencing the
emoji download link in
.. only:: html. Verified: pdflatex compiles thePDF cleanly both locally and in the containerized workflow; the HTML
build stays warning-free.
After merge the deploy publishes /v1.0/cryptnox-id-cli.pdf — the docs
hub's existing PDF link starts working.
