Replace the demo dataset with Fiction Retail, a synthetic CC0 e-commerce dataset with no usage restrictions (10 tables: customers, orders, order_items, products, suppliers, inventory, warehouses, shipments, returns, promotions). - Update load_sample_data.py to download fiction-retail.db - Update ingest_metadata.py with new table descriptions, tags, glossary terms, and ownership - Update config.demo.yaml engine name to fiction_retail - Update quickstart.sh sample questions and data-check logic - Update test fixtures to use generic table names - Remove legacy dataset references across scripts, config, and docs

Switch the demo/quickstart to Fiction Retail — a fully synthetic CC0 e-commerce dataset with cleaner schema and broader coverage (10 tables: customers, orders, order_items, products, suppliers, inventory, warehouses, shipments, returns, promotions).
Update load_sample_data.py to download fiction-retail.db
