chore: bump DIAL 0.x images and add advanced-v1/v2 compose stacks

Description of changes

Bump DIAL component images in dial-docker-compose and dial-docker-compose-advanced-v1 to the latest published 0.x.x releases (chat, chat-themes, core, adapter-openai, admin-backend/frontend, ai-dial-rag), and organize the two full-stack setups (Core, Chat, Admin, Keycloak) as parallel, equally supported options:

• Renamed dial-docker-compose-advanced to dial-docker-compose-advanced-v1 (0.x) and added dial-docker-compose-advanced-v2 (1.x).
• Added a CI smoke-test harness (ci/docker-compose.yml + test container checking Core /health and Keycloak /realms/master) for both folders, wired into pr.yml/release.yml.
• Added a quick-start tutorial (docs/tutorials/1.developers/0.local-run/2.quick-start-full-stack-advanced.md) covering both version lines, linked from docs/quick-start.md.
• Verified locally: docker compose config resolves for all edited compose files, and both new CI smoke-test stacks were run end-to-end (docker compose up --build) and passed.
