To work around this, I put the latest images of dependency track's api server and frontend server, then an image from bitnami/postgresql into my own private registry. Then, I updated my version of this chart to reference that registry and those images instead. A bit of extra work, but it's running just fine.

A lot of improvements have been made.

Either manually upgrade the tags for the images or switch to the official dependency-track helm chart (https://github.com/DependencyTrack/helm-charts)
