docs(e2e): log the v2.0.0-rc.1 and rc.6 Windows passes

Summary

Adds two rows to the results log in manual-e2e-checklist.md, both on the installed Windows CI artifacts:

• v2.0.0-rc.1 (2026-09-30): the first pass, plus the re-triage done before filing anything. Three of the defects found turned out to be fixed upstream or caused by the test harness.
• v2.0.0-rc.6 (2026-10-01): a pass targeted at the Windows changes since rc.1:
  • HUD: switching to the vertical layout and back moves the bar up the screen #951 fix;
  • H.264 High with BT.709 tagging;
  • audio tail ending with the video;
  • STT on Vulkan and word timing against a ground-truth clip;
  • MP4 export end to end.

Both rows are Partial and list what was not covered. The rc.6 row records why the mixer-continuity check was skipped: the machine's speakers were muted at 0 %, which silences WASAPI loopback.
